LOCAL butcher Ross Watkins from Bespoke Butchers was at Studley High School on Thursday to work with Year 11 students to build their confidence with food preparation.
The curriculum they are following is strongly based on higher level skills, including boning meat, filleting fish, vegetable preparation and roux sauces.
Last week the class discussed how to prepare pheasant with school catering manager, Leim Prince demonstrating how to fillet and prepare a pheasant and then pan fry with butter and seasoning.
This will lead to students preparing their own pheasant dish of pan-fried pheasant on a bed of horseradish mayo and rocket on a butter-fried bruschetta.
All the pheasants have been donated by the charity The Taste of Game.
